A tranquil tropical oasis of sustainability: Manon Les Suites

Copenhagen, a city renowned for its sleek Scandinavian design and innovative green initiatives, may not be the first place that comes to mind when you think of tropical getaways. Yet, hidden within this urban landscape is Manon les Suites, a hotel that seamlessly transports you to the lush, tranquil environs of Bali, all while championing sustainability at every turn. So naturally, I had to try it out for myself.

Part of the 5* hotels of the Guldsmeden brand, Manon les Suites (along with all nine other hotels within the Guldsmeden family) reflects the group’s philosophy that luxury and environmental responsibility can co-exist harmoniously, in the most unique and indulgent way possible. Certified with Green Key, Green Globe, The Golden Ø and more, the brand continues to lead the way for sustainable hotels.

Location and style

Located near the city’s picturesque lakes, Manon les Suites is just a short stroll from iconic landmarks like Tivoli Gardens, the Copenhagen City Hall, and the trendy neighbourhoods of Nørrebro and Vesterbro. This prime location allows guests to easily explore Copenhagen’s rich cultural scene, world-class dining, and stylish boutiques, all while enjoying the tranquillity of a luxurious retreat tucked away in the city centre.

Upon entering, it is clear Manon les Suites is a remarkable fusion of cultures, combining the laid-back, tropical vibe of Bali with the clean, modern aesthetics of Copenhagen. Stepping foot into the central atrium, we are immediately immersed in a verdant oasis, where palm trees and tropical plants cascade down the walls, enveloping the space in green. This green oasis actually serves a dual purpose – not only is it visually stunning, but also improves the hotel’s air quality and contributes to the building’s natural cooling system.

Natural and re-usable materials such as bamboo, teak, and recycled wood are used throughout the hotel, creating a warm and inviting atmosphere whilst ensuring that every corner is as environmentally friendly as it is stylish. The open-air corridors, flowing curtains, and intimate alcoves foster a sense of connection with nature, reminiscent of Bali’s open-air villas where the indoors seamlessly blend with the lush outdoors.

Suites of sanctuary

The rooms (all of which are suites in their own right) are another story in their own right. Stepping into one of the 87 suites of the hotel, we find ourselves in a welcome mix of Asian and Scandinavian cultures. The open-plan layout maximises natural light, reducing the need for artificial lighting and creating a warm, inviting atmosphere complete with a kitchenette, lounge area, bedroom and beautiful bathroom.

You also won’t find any single-use plastics here. In terms of drinking water, Denmark has some of the best and cleanest groundwater in the world and to discourage buying bottled water, each guest can find empty bottles made of 100% recycled and recyclable plastic in their room, to be filled with tap water before going out to enjoy the city. All bathroom products supplied are sourced from IloveEcoEssentials in refillable containers, from bamboo toothbrushes to toothpaste tablets (rather than tubes) and crystal deodorant to avoid spray bottles. Even the shower cosmetics, body lotion, oil and room diffuser all come from this eco-conscious brand, and might I add that they all smell and feel delightful – so much so that you can actually purchase your own from the Hotel’s own boutique next to the reception (alongside the hotel restaurant’s handmade plates or the dressing gowns) – make sure you leave space in your suitcase to stock up.

Manon les Suites also goes beyond the obvious, right the way through to recycled furnishings that add character without compromising comfort. The hotel has a policy to repair things that break (where possible) rather than throw them away, as well as upcycling second-hand products to create the most beautiful and eclectic mix of furniture and room decor – meaning no two rooms are the same. It’s a different type of luxury that works perfectly.

This even extends to the bedding – Balinese four-poster canopied beds, dressed in sustainable linen and two Scandi-style single duvets offer the ultimate sanctuary. As with the rest of the hotels in the Guldsmeden family, a collaboration with ProLana, based in Germany, is the root of all the hotel’s bedding and duvets – they are made from fairtrade natural materials (including rubberized coconut). When sheets, towels, and duvet covers tear or age beyond what’s expected at a hotel, they’re resown into pillow covers or donated to charity – a brilliant idea that shows the Guldsmeden brand hotels really have thought about every detail with both people and planet in mind.

Dining with a conscience

Dining at Manon les Suites is an experience that delights both the palate and the conscience. The hotel’s restaurant Chapung champions the farm-to-table philosophy, serving dishes made from organic, locally sourced, seasonal ingredients as much as possible – working with a limited number of suppliers such as Aarstiderne, who have a no-fly policy, providing the reassurance that food being served has not been flown in. The seasonal menu ensures that every meal is as fresh as it is flavorful, reducing food miles and supporting local farmers. Being certified with the Golden Ø-label from Organic Denmark (meaning 90-100% of the food used in the meals is certified organic) just reiterates the hotel’s ethos of ‘love food, hate waste’

We indulge each morning in the incredible breakfast spread. Situated on the 6th floor, the restaurant offers breathtaking views of Copenhagen’s lakes as we dine in an atmosphere as inviting as the dishes themselves. From creamy-chilli-infused scrambled eggs alongside delicious vegetables and salads, all the way to mini pastries, classic Scandinavian fresh breads and homemade muesli, there is even the option for bubbles at breakfast, or ginger shots if you are looking to honour your health. One thing I really loved about the buffet was the portions – they all appeared to be small. But this is simply because the chefs prepare as they go, and avoid bulk cooking to waste as little as possible. When any food does need to be binned, the food waste is kept separate, as with other Guldsmeden hotels, instead of going into the production of biodiesel and biogas. By separating out the leftovers, the kitchen can also monitor and evaluate new ways to minimise further waste in the future.

A plethora of amenities

Manon Les Suites is perhaps most famous for its Jungle Fish Saltwater Pool, which forms the epicentre of the hotel directly below an impressive glass ceiling (which perfectly lights the whole area during the day). Our expectations were exceeded here. Decorated with curtains of trailing tropical plants and vines lining the balconies, all of which are real, the “living walls” surrounding the pool really are stunning. Remaining precisely pruned to keep it in top condition, staff also think about the next generation of plants and vines, with areas dedicated to propagation in the hotel. This central space also houses a bar and pool deck area with several lounging options. The eco-friendly design features chemical-free water, enhancing the natural experience.

But the hotel offers much more; a range of amenities designed to enhance your stay while staying true to its green ethos. The rooftop terrace offers the perfect place to lounge alongside abundant greenery and spa, making it the perfect retreat in the middle of the city. The spa is equipped with a sauna, steam room, sugar scrub and outdoor bucket shower that uses only organic, eco-certified products, ensuring that your relaxation is as kind to the environment as it is to your body. If you’re in need of a good sweat, then look no further than the huge and extremely well-equipped gym – this was a must for me before the morning breakfast and bubbles in the restaurant!

One of the best things about Copenhagen is being able to cycle the city, in a safe and fun way. The hotel can also make this even easier for you, owning bikes which you can rent for the day. Not only is this the best way to see the city, but by renting a bike guests will also be contributing to a greater cause – with bike rental fees going to the Sports Confederation of Denmark, who then give out free sports memberships and money for equipment to needy families.

This unique fusion of Scandinavian sensibility and Balinese paradise offers an unparalleled experience, redefining what it means to indulge in luxury with a conscience.
