The Beautiful Brasserie Beau Bath – championing the best of British cuisine

Nestled within the charming Grade I-listed honey coloured Georgian terrace of Hotel Indigo Bath, Brasserie Beau is the city’s newest restaurant. Located on the hotel’s ground floor with both indoor and outdoor seating, Brasserie beau is a tasteful blend of modern sophistication and classic elegance, which I just had to try for myself.

Stepping inside, you are immediately enveloped in soft lighting, comfortable seating and artfully arranged tables that create an inviting space which is cosy yet upscale. The Brasserie exudes a sense of refined comfort, with linen-dressed tables and tasteful decor, making it an ideal spot for both intimate dinners and larger gatherings.

The menu celebrates modern British cuisine with a French twist. Championing wild food and supporting local producers, the sustainability focused menu is ever evolving, guided by the seasons and availability of ingredients. From sea-to-plate, and farm-to-fork, the restaurant offers a ‘catch of the day’ that depends on sustainable landings by day boats that are well-trusted, while the team also manage free-ranging herds of Fallow, Roe, and Muntjac deer in nearby Wiltshire, ensuring every cut of the restaurant’s wild-venison is fresh and responsibly sourced.

Sophistication and simplicity are reflected in the perfectly-executed classic dishes. We started with the recommended Forest of Dean Wild Boar Scotch Egg – a gourmet twist on tradition. A perfectly cooked soft-boiled egg, wrapped in well-seasoned, rich and gamey wild boar sausage meat, and coated in crispy golden breadcrumbs, providing that delightful crunch with every bite. For mains, we opted for the Venison Pavé and Fine Herb Gnocchi, with sides of the Signature Dirty Mash, Grilled Broccoli and Heritage Tomate, Pickled Shallot and Basil Salad. Venison Pavé was a true nod to the British countryside and the Brasserie’s commitment to simple quality. Paired with the dirty mash (I won’t spoil the mystery, but trust me when I say you will be dreaming of this mashed potato for days following) and the crunch of the grilled broccoli, made for a tantalisingly flavoursome dish. The well-made gnocchi is complemented by wild mushrooms and a broad bean puree that was a delight to devour, proving Brasserie Beau caters to non-meat eaters without compromising on flavour. No matter the dietary requirement, the team will endeavour to cater to everyone to the finest quality.

Always room for something sweet, for dessert we shared the Classic Treacle Tart, a symphony of flavours and textures, with a buttery shortcut pastry base and characteristic rich sweetness of the gooey filling. Combined with tangy crème fraîche and the crunch of some caramelised orange peel, this quintessentially British dessert was the perfect nostalgic treat to end our meal.

It’s a real feat of skill to orchestrate a symphony of taste, yet Executive Chef Liam Goldstone and his team manage to infuse each creation with care and seasonal magic, and we enjoyed every mouthful.

The magic doesn’t stop at the food either – it infiltrates the whole experience – from the gentle hum of engaging conversations from the other happy guests, through to the equally warm and attentive service of the Brasserie Beau team. From the moment you are seated, you feel well taken care of, with staff members keen to ensure that every aspect of your meal is perfect.
